This hard red wheat flour is an excellent wheat for baking bread. It has a high protein percentage which in turn gives a higher gluten content. This improves the dough mixing and handling characteristics and produces a loaf with a tender crumb and wonderful flavor. The milled four is excellent for use in bread, pizza dough and hamburger buns.
